MOSENTA

A quick and easy recipe when you’re really starving, with any vegetables you may have around, mostly spinach. A relatively simple and quick, but delicious recipe that dates back many centuries, and is usually made without measuring tools. Prepare a batter by mixing flour, water, salt and baking powder. Brush a baking pan with olive oil, spread this slightly runny batter, and add any vegetables you wish (spinach, scallions, dill, fennel) and freshly ground pepper. You may also add any other vegetable you like, such as parsley, spearmint, leek, hartwort etc. Mix it all together and spread the mixture evenly on the baking pan. Bake the mosenta for 40 minutes at 200 degrees.
